
Pasta is at the heart of every Italian family, so after Luisa discovered a gluten intolerance, Tommaso set his mind on finding a pasta recipe that was gluten-free yet tasty, with a great texture. It took a little over two years of hard work and determination, but he gave Luisa the ultimate gift: tasty pasta back in her life.

Amaranto is now on a food-truck mission to share that gift and prove that gluten-free food can be just as delicious as "normal" food, if not better. Fresh, seasonal and free-range ingredients are the base of everything we make, all from scratch. Where possible we use Italian and organic ingredients to keep the most authentic flavour. Our recipes are a taste of family tradition with the innovation of being completely gluten-free: a medley of Piedmont, Marche and Campania, the three regions that most shaped Tommy's cooking.
Our home base is in Wellsford, but you can find us regularly for takeaways at 340 Point Chevalier Road, and we pop up at markets and events all around Auckland.
