Why we always recommend the Bis di Primi at weddings

And what it means for the flow of the evening

Amaranto's Bis di Primi — ravioli in tomato and basil sauce alongside gnocchi with white lamb ragù, plated and ready to serve at a wedding

Do you know that feeling when you look at a menu and can't decide between two dishes? That's exactly why the Bis di Primi exists. Why choose, when you can taste a little bit of this and a little bit of that?

The Bis di Primi — bis meaning "twice" or "encore" in Italian — is two smaller portions of pasta served together, which combined make just a little more than a standard main. It's one of those ideas that sounds simple but changes everything about how a wedding dinner feels.

We've tried the one-main-per-person format at weddings a handful of times. It never worked well. The problem is that main orders are taken so far in advance that guests often forget what they chose — and end up wanting something completely different on the day. Imagine your guests queuing at the caravan, and the people at the back of the line can't get what they ordered because someone else already took it. We could of course make enough portions of both dishes for every single guest, so we'd never run out — but then what do we do with all the uneaten food? The waste would mean we'd need to charge significantly more, and it still wouldn't solve the confusion.

The Bis di Primi removes that problem entirely. There's no order to remember, no queue anxiety, no disappointment. Everyone gets both.

We plate each pasta separately — we've learned that some guests will want to try both, while others will happily take two of the same. And somehow, it always works out.

It's also much faster to serve. We can plate 100 portions of Bis di Primi in around half an hour — even less if you choose a family style service — because we've removed all the ordering time from the equation. That frees us up to spend a little more time with your guests at the caravan window, which is one of our favourite parts of the evening.

It's a small Italian tradition that, we've found, makes a very big difference.
