Hi, we are Luisa and Tommaso (but please call me Tommy) and we are the faces behind Amaranto.
We were both born and raised in Italy, we are married and we moved to New Zealand in 2011.
I come from Pesaro, in the Marche region and I have been a chef with for the past 20 years. I love tradition in the kitchen, but I am not afraid of experimenting with new ingredients and ideas. That’s how, when Luisa was found intolerant to gluten over a year ago, I started experimenting with gluten free flours in the hope to find a recipe similar enough in taste and texture to the traditional pasta.
After lots of trial and error, I believe I have now found a recipe that it’s worth comparing with traditional pasta.
My wife Luisa is from Torino, in Piemonte and she is a hair and makeup artist and she helps me out with the behind the scene work. Most of the times you’ll find her working at the website or styling the food for a photo.
